Kale & Carrot Macaroni & Cheese

Last night I rummaged through my cabinets and fridge to find something to throw together as a side dish for Tumeric Pan Fried Chicken Fingers.  Here’s a list of what I came up with for a super easy, extra delicious dish:

  • Elbow macaroni noodles
  • Kale
  • Carrots
  • Feta and parmesan cheeses
  • Rosemary & Garlic seasoning
  • Olive oil
  • Sea salt

Here’s a list of what to do:

1. Chop kale, dice carrots – saute together in olive oil and sea salt in a large skillet

2.  Boil macaroni noodles per directions on package

3. When macaroni is tender, drain and pour noodles into a pretty bowl

4. Stir feta cheese crumbles into warm pasta

5. When noodles are covered with the cheese, toss in kale and carrots

6. Next sprinkle in parmesan cheese and the rosemary and garlic seasoning to taste

7. Serve it up along side any main course
