Spaghetti Squash is a beautiful thing. Serve it up as a main course or a side dish. There’s no limit to what this golden goodness and your imagination can do. Here’s what I did the last time I prepared Spaghetti Squash:
Put one or two medium squashes in the oven at 375 for one hour. Afterward, slice them lengthwise and spoon out the seeds. Take a fork and scrape the glorious yumminess out. It looks just like pasta spaghetti! I tossed it in a skillet with loads of butter and olive oil, red bell pepper, kosher salt. But you can use anything! Any kind of pasta sauce, mushrooms, meat, endless veggie choices, etc. Spaghetti squash rocks!
